Chickpea rice or Garbanzo beans rice, also known as chole pulao is a delicious vegan & gluten-free, one-pot meal recipe from India. It is prepared by cooking rice and chickpeas in a delicious onion-tomato sauce flavored with Indian spices. The dish is vegan and gluten-free.

Step 1: Collect the recipe ingredients.

Step 2: Heat oil in a wok. Add whole spices and saute them for a few seconds.

Step 3: Add sliced onion and cook until the onion becomes translucent.

Step 4: Add ginger garlic paste and saute until the raw smell of garlic goes away.

Step 5: Add powdered spices and saute for a few seconds.

Step 6: Add chopped tomatoes, green chilies, and salt. Mix everything.

Step 7: Cook until the tomatoes turn mushy.

Step 8: Add rinsed uncooked basmati rice. Saute for 1-2 minutes.

Step 9: Add boiled chickpeas.

Step 10: Add chopped cilantro and water. Mix.

Step 11: Cover the cooking pot and cook for 15-20 minutes or until the rice is cooked.

Step 12: Once cooked, fluff rice with a fork.
