Indian style vermicelli with vegetables

This Indian style vermicelli is loaded with vegetables and flavored with Indian spices. It's a quick and easy vegan recipe that can be served in any meal of the day.

Step 1: Dry roast vermicelli on medium flame until the strands turn golden brown. Keep stirring in between to avoid burning.

Step 2: Prepare an onion tomato masala with peanuts, spices, onion, tomato, and green chilies. 

Step 3: Add chopped vegetables of choice, mix with the masala, and cook for 6-7 minutes. If required add a few tablespoons of water.

Step 4: Add the roasted vermicelli and cook with the vegetables for about a minute before adding water.

Step 5: Add water or vegetable stock and cook covered for 10 minutes or until all the liquid gets absorbed. Keep the flame low.

Step 6: Once the vermicelli is cooked, switch off the stove but don't remove the lid for 2 minutes. After that gently fluff the vermicelli with a fork.

Step 7: Finally, garnish with cilantro and fresh lime juice. Serve hot with a chutney or any side dish of choice.
