Vegan Fesenjan is a very unique and tasty recipe from Iran. Also known as Fesenjoon, this dish is a must try dish by every foodie.

Step 1: Collect the recipe ingredients.

Step 2: Put walnut kernels in a grinding jar.

Step 3: Make a fine powder.

Step 4: Put ground walnuts in a cooking pot.

Step 5:  Dry roast on a low flame for 3-4 minutes.

Step 6: Add water to the roasted ground walnut and let it boil.

Step 7: Once the water starts boiling, add vegetable bouillon, pomegranate molasses, brown sugar, cinnamon, salt, and pepper.

Step 8: Mix everything and cover the pot.

Step 9: Cook for about an hour. Keep on checking and stirring in between to make sure it’s not sticking to the bottom.

Step 10: Heat oil in a cooking pot. Add chopped onion and cook until the onion starts turning brown.

Step 11: Add turmeric powder and saute for a few seconds.

Step 12: Add potato cubes and cook for 4-5 minutes.

Step 13: Soak soya chunks in hot water for 10 minutes, squeeze out water and then add the chunks to the pot.

Step 14: Stir fry for around 2 minutes. Add around ½ a cup of water and cook for another 3-4 minutes.

Step 15: Add walnut stew and mix.

Step 16: Cook for another 30 minutes stirring in between.

Step 17: Garnish with chopped parsley and pomegranate arils. Your delicious vegan fesenjan (fesenjoon) is ready to be served!
