Step 1: Heat oil in a pan and saute all-purpose flour, chili powder, cumin powder, garlic powder, and dried oregano in it for about a minute.

Step 2: Add tomato paste and mix.

Step 3: Add vegetable stock

Step 4: Whisk continuously and cook until the sauce thickens.

Step 5: Add apple cider vinegar, salt, and black pepper.

Step 6: In another pot saute onion, garlic, Mexican chili powder, and cumin powder.

Step 7: Add red pepper paste and saute for a few seconds.

Step 8: Add cooked kidney beans, cilantro, scallion, and salt. Cook for 2-3 minutes.

Step 9: Add shredded cheese and mix.

Step 10: Spread some enchilada sauce on a baking dish.

Step 11: Apply some enchilada sauce on one side of a tortilla and top it with some bean filling.

Step 12: Roll the tortilla. Repeat the process with all the remaining tortillas.

Step 13: Put all the rolled tortillas in a baking dish with the open side down. Spread enchilada sauce on them.

Step 14: Spread shredded cheese on top. Bake at 200°C (around 400° F) for around 20 minutes or until the cheese melts and gets some brown patches.

Step 15: Garnish with chopped cilantro/ parsley. Enjoy hot or warm.
