- 5 slices bread
- 1 ripe avocado
- 1 cup pineapple chunks
- 1 cup sweet corn kernels
- 1 chili pepper finely chopped
- 1 garlic clove grated
- 1.5 tbsp lime juice
- ½ teaspoon ground black pepper
- Salt as per taste
Peel and mash the avocado in a bowl. Add salt, pepper, garlic, chili, and lime juice.
In a pan add pineapple cubes and saute till they start caramelizing. Take out on a plate and either mash or finely chop them.
In the same pan add corn kernel, sprinkle a pinch of salt and allow to cook for 3-4 minutes.
Add pineapple and corn to avocado and mix well. Check and adjust the seasoning.
Toast the bread slices as per your liking and spread the avocado mix. Enjoy with your favorite breakfast drink.
