Notes

  • Instead of noodles, spaghetti can also be used in this recipe. However, if using spaghetti in an Asian recipe, don't cook it al dente. It should be slightly softer in Asian recipes.
  • If you cannot find vegan or vegetarian oyster sauce, feel free to use any other Asian stir-fry sauce of your choice.
  • You can also add vegetables like bell peppers, broccolini, greens beans, and snow peas to this dish.
  • As the sauces already have salt in them, add more salt carefully and only if required.
  • Always use a large skillet or wok for stir-frying. It makes stirring the food easier.
  • Stir fry on high heat to get the best result.
  • As the Asian style stir-frying is done on high heat, keep all the ingredients ready and near the stovetop before starting the process.
  • To make more spicy mushroom noodles, drizzle some chili oil or chopped green chilies on top.
