  • Make the salad dressing by mixing olive oil, lemon juice, minced garlic, chili flakes, oregano, salt, and pepper.
  • Put black-eyed peas, chopped vegetables, and fresh herbs in a large bowl.
  • Pour salad dressing. Toss well. Check and adjust the seasoning. Enjoy!
