Mango mug cake

Mango mug cake is an easy and delicious dessert recipe that gets ready in just 5 minutes from start to finish. If you are looking for a quick recipe to satisfy your sudden sweet cravings then this mango mug cake recipe is perfect for you. It's an egg and dairy-free recipe.

Ingredients

  • 4 tablespoons all-purpose flour
  • 2 tablespoons granulated sugar adjust to taste
  • ½ teaspoon baking powder
  • teaspoon salt
  • 3 tablespoons mango pulp without added sugar
  • 3 tablespoons any milk of choice
  • 2 tablespoons canola oil

Instructions

  • Put all the dry ingredients in a mug. Whisk.
  • Add all the wet ingredients and mix until you get a smooth batter.
  • Microwave for around 2 minutes and 30 seconds or until nicely baked.

Notes

  1. If you are using store-bought mango pulp make sure it's without added sugar. If it is with sugar then add more sugar carefully.
  2. If you are making pulp at home, make sure to use a sweet and fibreless variety of mango.
  3. Mix the batter properly and make sure the dry ingredients are not stuck at the bottom of the mug.
  4. Use a slightly small and shallow coffee mug for making a mug cake. If you use a very large and deep mug, the cake will stay at the bottom of the mug and won't look very pleasing. However, don't pick a very small mug also otherwise the cake batter will start overflowing once you start microwaving it. 
  5. You can also add some chopped mangoes or nuts to the mug cake batter.
  6. Different ovens give different results. So, keep an eye on the cake after 2 minutes and microwave further only if required.
  7. Don't microwave for a very long period otherwise, the cake will become very chewy.
