Spicy garlic mushrooms

Spicy garlic mushrooms is a quick and easy appetizer or side dish recipe that tastes delicious. It pairs well with a lot of dishes from different cuisines. These spicy mushrooms get ready in less than 30 minutes and are vegan and gluten-free.

  • Large cooking pot or skillet

Ingredients

  • 500 grams button mushrooms Cut into bite size pieces
  • 1 medium red onion
  • 6-7 large garlic cloves minced
  • 2 tablespoons lime juice
  • 2-3 stalks spring onion finely chop and keep white and green parts separated
  • 2 teaspoons coriander powder
  • 2 teaspoons red chili flakes
  • ½ teaspoon Kashmiri red chili powder
  • ½ teaspoon coconut sugar or any sweetener of choice
  • ¼ teaspoon ground black pepper adjust to taste
  • Salt to taste
  • 1.5 tablespoons olive oil or any neutral flavored oil

Instructions

  • Heat oil in a skillet. Add chopped onion and cook until the onion starts turning brown.
  • Add the chopped white part of spring onion and minced garlic. Saute for a few seconds or until the raw smell of garlic goes away.
  • Add red chili flakes, red chili powder, coriander powder, and coconut sugar. Saute for a few seconds.
  • Add mushrooms and cook on a medium flame until the moisture released by the mushrooms dries up.
  • Add salt and pepper. Saute for a few more minutes.
  • Finally, add lime juice and chopped spring onion greens. Mix and serve.

Notes

  1. Use mushrooms of almost the same size for even cooking.
  2. Cut mushrooms into large bite size pieces as they shrink in size after getting cooked.
  3. If the mushrooms are small in size you can use them whole too.
  4. Canned mushrooms can also be used to make this dish.
  5. Make this dish on a medium or high flame. If you cook the mushrooms on a slow heat, they will get boiled in their juices.
  6. Don't skip sugar in the recipe. It won't make the dish sweet but will only balance the heat.
