Moroccan roasted potatoes- a delicious and easy to make side dish spiced with the warm flavors of paprika, cumin, black pepper, and garlic. These spiced potatoes are vegan and gluten-free.
Put veg bouillon cubes, olive oil, lemon juice, salt, pepper, paprika, garlic powder, and cumin powder in a bowl. Mix until the bouillon cubes get dissolved.
Add potato cubes and toss until the spices get evenly coated on all the cubes.
Spread the potato cubes in a single layer on a baking tray lined with a baking sheet.
Bake in a preheated oven at 200°C (around 400°F) for around 30 minutes or until the potatoes are nicely cooked and turn golden brown. Stir once halfway through baking time.
Once done, take the roasted potatoes out of the oven and allow reaching room temperature. Garnish with chopped cilantro. Enjoy!

Any variety of potatoes can be used in this recipe.
You can leave the skin on if you prefer roasted potatoes with skin.
For some heat and more flavor, you made 1-2 teaspoons of harissa paste.
