Easy tropical Popsicle

Refreshing, sweet, and tangy, this delicious Vegan tropical popsicle is a very easy to make frozen dessert that needs just a handful of ingredients easily available during summers. Beat the heat in a healthy way with this vegan summer dessert.

Ingredients

  • 2 cups chopped mangoes
  • 1 cup chopped pineapple
  • 0.25 cup pineapple juice
  • 3 tbsp lime juice adjust as per taste
  • Zest of 2 limes
  • 1.5 cups coconut milk
  • 0.5 cup shredded coconut optional but recommended
  • 2 tbsp maple syrup any other sweetener of your choice

Instructions

  • Keep around 2 tablespoons of shredded coconut aside and put all the remaining ingredients in a blender.
  • Once blended add the remaining shredded coconut to the jar and mix with a spoon.
  • Pour into the Popsicle molds and freeze for 6-7 hours or overnight.
  • Unmold and enjoy!

Notes

  • The amount of sweetener and lime juice may vary depending upon the sweetness of your mango, pineapple, and your taste preference. So after blending everything taste and adjust the sweetener and lime juice before freezing.
  • If you don't have fresh fruits, canned or frozen can be used too.
