Elote-Mexican style street corn

Elote is a Mexican style street corn dish in which corn on the cob is either grilled or boiled and then spread with butter, mayonnaise and cheese. An absolute delight for corn lovers.

Ingredients

  • 4 piece corn on the cobs
  • 1.5 tablespoons softened butter
  • 0.5 cup mayonnaise
  • 1 & ⅓ cup Cotija cheese (Use grated parmesan cheese/ crumbled feta cheese if you couldn't find Cotija)
  • 1 + 4 teaspoon Ancho chili powder/ red chili powder
  • Juice of 1 lemon

Instructions

  • Bring a large pot of salted water to boil and add corn to it. Cook till the corn is done. It will take around 30 minutes.
  • In the meanwhile mix mayonnaise, 1 teaspoon red chili powder and lemon juice in a bowl. Keep it aside.
  • Once done, take out the boiled corn on the cob on a plate and let them cool for a few minutes.
  • Insert skewers from the bottom end of the corn, they will act as handles and will make eating Elote more convenient.
  • Apply butter on the corn followed by mayonnaise paste and then nicely coat them with cheese. Finally, sprinkle some red chili powder.
  • Serve with lime/lemon wedges and enjoy your Mexican street food!
