Greek Watermelon Salad

Greek watermelon feta salad is a refreshing, vegetarian summer salad that has a unique combination of sweet crunchy watermelon with creamy, savory feta cheese, and refreshing mint leaves. A perfect side dish for BBQs.

Ingredients

  • 3 cups watermelon cubes deseeded
  • 1 cup chopped Persian/ English cucumber
  • ¼ cup thinly sliced red onion
  • 10-12 mint leaves finely chopped
  • 2 tablespoons lemon juice adjust as per taste
  • ½ cup crumbled feta cheese
  • 1 tablespoon extra virgin olive oil
  • Salt and pepper to taste

Instructions

  • Put watermelon, cucumber, onion, and mint leaves in a bowl.
  • In another bowl prepare the dressing by mixing olive oil, lemon juice, salt, and pepper.
  • Pour the dressing over salad and toss.
  • Add crumbled feta cheese on top and enjoy!

Notes

  1. Don't make this salad in advance as the watermelon will release a lot of juice and won't taste fresh and crunchy after a few hours.
  2. You can also add fresh basil leaves to this salad.
  3. For a sweeter taste, drizzle some honey, maple syrup, or any other sweetener of your choice.
  4. You can also add pitted kalamata olives to this watermelon salad.
  5. Adding cucumber and onion is optional. Just watermelon and feta with mint leaves taste great too.
