Greek potato salad is a simple, light and refreshing salad which can be prepared within minutes and tastes great with almost everything. It can be served warm as well as chilled.

4 medium-sized potatoes 1/4 cup chopped parsley 1/4 cup chopped dill 2 tbsp chopped spring onions 3-4 garlic cloves grated 2 tbsp lemon juice Adjust as per your taste 4 tbsp olive oil 1/4 teaspoon black pepper powder Adjust as per your taste Salt as per taste
Boil the potatoes, peel and make bite-size cubes. Don't overcook the potatoes, we don't want them to turn mushy,
Mix olive oil, lemon juice, grated garlic, salt, and pepper, in a bowl and keep aside.
In another large bowl, mix potatoes with chopped herbs. Pour the olive oil dressing on top, mix. Garnish with some chopped dill or parsley and serve.
Don't overcook the potatoes otherwise, the potatoes will turn very mushy and will spoil the salad.
This salad can be served both warm and chilled.
