Indian roasted potatoes are crispy on the outside and tender inside, tossed with aromatic curry spices and herbs. Each bite of these potatoes bursts with warm, earthy flavors of turmeric, cumin, and coriander. Perfect as a side dish or a flavorful snack.

Step 1: Collect the recipe ingredients.

Step 2: Wash and peel potatoes. Cut into bite-size pieces. Put potato cubes in a large mixing bowl.

Step 3: Mix olive oil, lemon juice, minced garlic, all the spices, and salt in a small bowl.

Step 4: Pour the spice mix over the potato cubes and toss.

Step 5: Evenly spread the potato cubes in a single layer on a baking tray lined with a baking sheet.

Step 6: Bake in a preheated oven at 200℃ (or, 400℉) for 25-30 minutes.
