Quinoa with mushrooms and spinach is a simple and tasty vegan dish that can be prepared in less than 35 minutes.

Step1: Collect the recipe ingredients.

Step 2: Rinse quinoa and put in a pot along with water.

Step 3: Cook uncovered for 12-15 minutes. Turn off the heat and cover the pot with a lid. Leave covered for 5 minutes.

Step 4: After 5 minutes fluff quinoa with a fork and keep aside.

Step 5: Saute onion in some olive oil until the onion turns translucent.

Step 6: Add sliced mushrooms and minced garlic. Cook until the moisture of mushrooms dries up.

Step 7: Add seasonings and saute for a few seconds.

Step 8: Add cooked quinoa, baby spinach, and green onion. Mix and cook until the spinach leaves get wilted.
