Easy potato soup with mushrooms

This creamy vegan and gluten-free soup is a cozy blend of starchy potatoes and earthy mushrooms, enhanced with aromatics like onion and garlic, Italian seasoning, and a hint of red pepper flakes.

Step 1: Collect the recipe ingredients.

Step 2: Saute sliced mushrooms in olive oil for 4-5 minutes on medium heat. Transfer them to a bowl.

Step 3: Heat some more olive oil in the same pot and cook chopped onion until it turns translucent.

Step 4: Add minced garlic and saute for a few seconds.

Step 8: Cook covered for around 25 to 30 minutes.

Step 9: Roughly mash half of the potato cubes with a masher or the back side of a ladle.

Step 10: Add sauteed mushrooms, milk, and chopped green onion.

Step 11: Mix and cook for another 4-5 minutes. Your potato soup with mushrooms is ready to be served.
