Palak paneer also known as saag paneer is a very popular vegetarian and gluten free vegetarian recipe from India. It's made with pureed spinach and Indian cottage cheese. A must try vegetarian recipe.

Step 1: Collect the recipe ingredients.

Step 2: Wash spinach and blanch for 2-3 minutes.

Step 3: Transfer to a bowl of ice cold water and leave in it for 1 minute then strain.

Step 4: Transfer to a grinding jar. Add green chilies and make a paste.

Step 5: Saute dried red chilies and cumin seeds in oil until they become fragrant.

Step 6: Add chopped garlic and saute until its raw smell goes away.

Step 7: Add chopped onion and cook until it starts turning brown.

Step 8: Add red chili powder, turmeric powder, and coriander powder. Saute for a few seconds.

Step 9: Add chopped tomatoes, ginger, and salt. Cook until the tomatoes turn mushy.

Step 10: Add spinach paste and a cup of water.

Step 11: Mix and cook for 2-3 minutes.

Step 12: Add garam masala and crushed kasoori methi.

Step 13: Add milk and mix.

Step 14: Add paneer cubes, mix, and cook for 1-2 minutes.

Step 15: Turn off the heat and cover the pan for 5 minutes. Before serving, drizzle some ghee or butter on top.
