STUFFED PEPPERS WITH MUSHROOMS

These stuffed peppers are loaded with a savory blend of mushrooms, quinoa, and walnuts, creating a hearty and satisfying filling. Melted cheese on top adds the perfect finishing touch to this cozy, gluten-free meal.

Step1: Collect the recipe ingredients.

Step 2: Cook quinoa.

Step 3: Apply oil on bell pepper halves and place them on a baking tray with the hollow side down.

Step 4: Bake in a preheated oven at 200℃ (400℉) for 8-10 minutes.

Step 5: Heat oil in a pan. Add chopped onion and minced garlic. Saute until the onion turns translucent.

Step 6: Add chopped mushrooms and cook on medium-high heat until the moisture released by the mushrooms starts drying up.

Step 7: Add tomato paste, chopped tomatoes, and all the seasonings. Cook on medium heat for 4-5 minutes.

Step 8: Add cooked quinoa, chopped walnuts, and spring onion.

Step 9: Mix everything and then turn off the heat.

Step 10: Stuff the mushroom quinoa filling in roasted bell peppers. Spread shredded cheese on top.

Step 11: Bake at 200℃ (400℉) for 12-15 minutes or until the cheese melts. Your stuffed peppers with mushrooms are ready!
