Simple, easy to make, and delicious, this tomato quinoa soup will satisfy your taste buds. Made with basic ingredients, this soup is vegan and gluten free.

Step 1: Collect the recipe ingredients.

Step 2: Rinse quinoa and put in a saucepan. Add water.

Step 3: Cook uncovered on low heat for around 15 minutes or until all the water dries up. Turn off the heat and cover the pot. Leave covered for 5 minutes.

Step 4: Spread the diced tomatoes, onion, and unpeeled whole garlic cloves on a baking tray lined with a baking sheet. Drizzle olive oil and sprinkle seasonings on top.

Step 5: Bake in a preheated oven at 200℃ (around, 400℉) for around 30 minutes.

Step 6: Allow the roasted vegetables to reach room temperature then put in a blending jar along with ½ a cup of vegetable stock .

Step 7: Blend to make a smooth paste.

Step 8: Put the blended vegetables in a cooking pot. Add cooked quinoa and vegetable stock. Mix.

Step 9: Cook for 5-7 minutes. Turn off the heat. Garnish with chopped cilantro or basil.
