This vegetarian harira is a hearty Moroccan soup made with lentils, chickpeas, and vermicelli simmered in a spiced tomato broth. It’s aromatic, comforting, and full of warm flavours.

Step 1: Collect the recipe ingredients.

Step 2: Sauté chopped onion, carrot, and celery in olive oil fo 4-5 minutes.

Step 3: Add minced garlic and powdered spices. Sauté for a minute.

Step 4: Add tomato paste. Sauté for a minute.

Step 5: Add red and green lentils, chopped cilantro, and parsley. Sauté for 1-2 minute.

Step 6: Add passata and salt. Sauté for a minute.

Step 7: Add vegetable stock, mix, and cover the pot. Cook covered for 30-40 minutes.

Step 8: Add vermicelli.

Step 9: Add cooked chickpeas. Mix and cook for 10-12 minutes or until the vermicelli is cooked.

Step 10: Add lemon juice and fresh cilantro. Mix. Your vegetarian harira soup is ready!
