This vegetarian tom yum soup is a delicious and light vegan Thai soup loaded with mushrooms. It's very easy to make and is full of flavors.

Step 1: Collect the recipe ingredients.

Step 2: Crush a lemongrass stalk and keep it aside.

Step 3: Crush galangal and keep it aside too.

Step 4: Heat oil in a pan and add red chili flakes. Saute for a few seconds.

Step 5: Add vegetable stock.

Step 6: Crush a few kaffir lime leaves and add to the pot along with crushed lemongrass stalk and galangal.

Step 7: Cover the pot and cook for 10-15 minutes.

Step 8: After 15 minutes, remove the kaffir lime leaves, lemongrass, and galangal. Discard them.

Step 9: Add mushrooms, soy sauce, brown sugar, and chopped Thai red chili peppers. Cook covered for another 10 minutes.

Step 10: Add cherry tomato halves. Cook for 1-2 minutes only then turn off the heat.

Step 11: Add lime juice and chopped cilantro.  Your easy and tasty vegetarian tom yum soup is ready to be served.
