Vegan white bean soup with spinach and vegetables - a hearty soup that's delicious and very easy to make. It is a complete meal in itself.

Step 1: Collect the recipe ingredients.

Step 2: Heat oil in a cooking pot.

Step 3: Add finely chopped onion, carrot, and celery. Sauté for 6-7 minutes or until the vegetables are cooked but still crunchy

Step 4: Add minced garlic.

Step 5: Add thyme, oregano, and chili flakes. Sauté for about a minute.

Step 6: Add vegetable stock to the pot.

Step 7: Take out around half a cup of cooked beans and keep aside. Add remaining beans to the pot.

Step 8: Mash the beans taken out in the previous step, mash to make a paste and add to the pot along with salt and pepper. Cook for 6-7 minutes.

Step 9: Add baby spinach and mix.

Step 10: Add whisked coconut milk and stir continuously for about a minute.

Step 11: Cook until the spinach leaves get wilted.

Step 12: Add lemon juice and chopped cilantro. Mix.
