Zucchini potato soup is a simple and tasty vegan soup made with roasted vegetables and flavored with basic herbs.

Step 1: Collect the recipe ingredients.

Step 2: Put potato cubes, sliced onion, garlic cloves, olive oil, salt, pepper, dried basil, and rosemary in a bowl. Toss.
