Baingan ka bharta is a very popular vegan and gluten-free Indian recipe made with mashed roasted eggplant, flavored with Indian spices.

Step 1: Make 3-4 vertical slits on a globe eggplant.

Step 2: Insert peeled garlic cloves and green chilies in different slits.

Step 3: Brush the eggplant with some cooking oil.

Step 4: Put the eggplant over direct flame and roast until the skin gets charred from all sides and pulp is cooked well.

Step 5: Allow it to reach room temperature.

Step 6: Remove the charred skin of the eggplant.

Step 7: Transfer the eggplant pulp to a bowl.

Step 8: Mash the roasted eggplant, garlic cloves, and green chilies.

Step 9: Heat oil in a pan and add cumin seeds. Let the seeds splutter for a few seconds.

Step 10: Add chopped onion, ginger, and garlic. Saute until the onion turns translucent.

Step 11: Add powdered spices and salt. Saute for a few seconds.

Step 12: Add mashed eggplant.

Step 13: Cook for around 3-4 minutes.

Step 14: Spread a layer of chopped tomatoes and green chili over the eggplant. Don't mix.

Step 15: Cover the pot with a lid. Cook for around 6-7 minutes.

Step 16: Remove the lid and mix the tomatoes with eggplant. Cook for another 2-3 minutes.

Step 17: Garnish with chopped cilantro. Your baingan ka bharta is ready to be served!
