Baked butternut squash  with chickpeas

This baked butternut squash stuffed with chickpeas is a very satisfying vegan comfort food perfect for the holiday season.

Step 1: Collect the recipe ingredients.

Step 2: Cut the butternut squash in half and scoop out the seeds.

Step 3: Mix olive oil and red chili powder in a bowl.

Step 4: Brush the chili oil mix on butternut squash flesh.

Step 5: Place it on a baking tray lined with baking sheet and keep the flesh side down.

Step 6: Bake in a preheated oven at 200°C (400℉) for around 45 minutes

Step 7: Scoop out the pulp, leaving around half an inch margin on all sides.

Step 8: Heat olive oil in a pan and add chopped onion. Saute until the onion becomes translucent.

Step 9: Add crumbled bouillon cube and minced garlic. Saute for a few seconds.

Step 10: Add salt and all the other seasonings. Saute for around 30 seconds.

Step 11: Add chopped or mashed butternut squash pulp.

Step 12: Cook for 2-3 minutes then turn off the heat.

Step 13: Add nutritional yeast and lemon juice.

Step 14: Stuff the chickpea mix in the butternut squash cavity.

Step 15: Sprinkle any melting vegan or dairy cheese on top.

Step 16: Bake at 200°C (400℉) for another 10 minutes or until the cheese melts.
