The recipe that I am sharing today is perfect for such days. To make it, all you need is some frozen vegetables, canned tomatoes, some seasonings, and basic vegetables like onion and garlic.

What goes in frozen vegetable soup?
For this easy mixed vegetable soup recipe, you will need the ingredients that are shown below:
Ingredient notes and substitute suggestions
- Frozen vegetables: Almost every frozen vegetable can be used in this easy soup recipe. I have mixed different packs of frozen vegetables like carrots, green peas, sweet corn kernels, broccoli, green beans, and spinach. Feel free to use mixed vegetables of your choice. Fresh, frozen, and canned, all are fine to be used.
- Crushed tomatoes: You can also use diced tomatoes or marinara sauce. If you have fresh tomatoes, you can also puree and cook them to use in this soup.
- Onion: Red, white, or brown onion, use whatever is available to you.
- Seasonings: To flavor this frozen veggie soup, I have used bay leaf, fresh garlic, mixed Italian seasoning, ground black pepper, and red pepper flakes. You can use ingredients of your choice to season it.
- Fresh herbs: Cilantro(coriander leaves) is my favorite herb so I prefer using it. If you don't like cilantro, use parsley, green onion, or dill.
- Vegetable stock: Water can be used too but vegetable stock will make your soup more flavorful.
- Cooking oil: I have used olive oil, you can also use vegetable oil, canola oil, or avocado oil.

How to make (step-by-step instructions)?
To make this delicious soup with frozen vegetables, just follow the easy step-by-step instructions given below:
Step 1: Heat oil in a large pot. Add finely chopped onion and saute until it becomes translucent.
Step 2: Add minced garlic and bay leaf. Saute for a few seconds.
Step 3: Add Italian seasoning, red pepper flakes, and ground black pepper. Saute for around 30 seconds.
Step 4: Add frozen vegetables except spinach.
Step 5: Saute for 2-3 minutes.
Step 6: Add crushed tomatoes.
Step 7: Cook for 1-2 minutes.
Step 8: Add vegetable stock and salt.
Step 9: Mix everything and cook for around 10 minutes on medium heat.
Step 10: Add spinach to the soup pot and mix.
Step 11: Cook for another 5 minutes then turn off the heat.
Step 12: Add lemon juice and chopped cilantro. Mix.
Your easy vegetable soup with frozen veggies is ready to be served!

Serve this vegetable soup hot or warm.
You can serve it with any toasted bread, dinner rolls, crackers, cornbread, breadsticks, or garlic bread.
This simple soup can also be paired with any pasta, quinoa, rice, or couscous dish.
Or, just serve a salad on the side.
Storing, freezing, and reheating tips
Store the leftover soup in an airtight container and refrigerate for a maximum of 4 days.
You can also freeze this soup in batch-size freezer-safe containers, mason jars, or zip-lock bags for up to 3 months.
To reheat, if the soup is frozen, thaw it first. Then, you can reheat it on the stovetop or in the microwave.
If reheating on the stovetop, transfer the soup to a cooking pot and put the pot on the stove. If the soup has thickened, add some hot liquid (water or vegetable broth) then reheat covered until heated well. Keep stirring in between.
Or, transfer the soup to a microwave-safe container then microwave for about a minute, take out the bowl, stir, and microwave again until evenly heated.
If required, reseason the soup while reheating.

- Feel free to use the frozen vegetables of your choice. I have used frozen broccoli, green peas, carrots, sweet corn, and green beans. You can mix different frozen vegetables to make this soup. Some other vegetables that go well in this recipe are cauliflower, bell peppers, mushrooms, zucchini, sweet potatoes, potatoes, etc.
- Instead of frozen, fresh mixed veggies can be used too but then the cooking time will increase.
- If you want to use fresh tomatoes instead of canned ones, finely chop or crush them in a food processor. Add fresh tomatoes before adding the vegetables and cook until the tomatoes turn mushy. Add vegetables only once the tomatoes are cooked.
- If your frozen broccoli florets are too big, chop them into smaller pieces before adding to the soup.
- You can also add pasta to this soup, it will become more filling with pasta in it.

Easy soup with frozen vegetables
Equipment

Ingredients
- 3 cups frozen vegetables of choice
- 1 cup frozen spinach
- 1 medium onion finely chopped
- 2-3 garlic cloves minced
- 1 can of crushed tomatoes 425 grams
- 2 tablespoons lemon juice adjust to taste
- A handful of fresh cilantro finely chopped
- 1 bay leaf
- 1 tablespoon Italian seasoning
- ½ teaspoon red pepper flakes
- ¼ teaspoon ground black pepper
- Salt to taste
- 4 cups vegetable stock
- 1 tablespoon olive oil
Instructions
- Heat oil in a pot. Add chopped onion and cook until it turns translucent.
