BLACK EYED BEANS AND SPINACH CURRY

Looking for an easy and tasty bean curry recipe? Try this Indian black-eyed beans curry with spinach. It's vegan and gluten-free. This delicious curry can be served with rice as well as roti.

Step 1: Collect the recipe ingredients.

Step 2:  Heat cooking oil of choice in a pan and add cumin seeds. Let the seeds splutter for a few seconds.

Step 3: Add finely chopped onion.

Step 4: Add minced ginger and garlic.

Step 5:  Cook until the onion starts turning brown.

Step 6: Add red chili powder, turmeric powder, coriander powder, salt, and around a tablespoon of water. Mix and saute for about a minute on low flame.

Step 7: Add chopped tomatoes and green chilies. Cook until the tomatoes are no longer raw and turn mushy.

Step 8: Add tomato paste and sauté for a minute.

Step 9: Add cooked black eyed peas and saute in the onion-tomato sauce for about 2 minutes.

Step 10: Add water, cover the pan and cook for 5 minutes.

Step 11: Add finely chopped fresh or frozen spinach.

Step 12: Mix and cook for 4-5 minutes.

Step 13: Add garam masala, lemon juice, and chopped coriander leaves.
