Moong dal khichdi- a one pot Indian meal recipe made with yellow mung beans and rice. It's the comfort food of India.

Step 1: Collect the recipe ingredients.

Step 2: Mix rice and yellow mung beans and wash well. Soak in water for at least 15 minutes.

Step 3: Roughly crush ginger, garlic, and green chilies in a mortar and pestle.

Step 4: Heat oil in a pressure cooker. Add cumin seeds and asafoetida. Sauté for a few seconds.

Step 5: Add chopped onion and cook until it becomes translucent.

Step 6:  Add ginger, garlic, and green chili paste. Sauté for a few seconds.

Step 7: Add turmeric powder and coriander powder. Sauté for a few seconds.

Step 8: Add chopped tomatoes and salt.

Step 9: Cook until the tomatoes turn mushy.

Step 10: Discard the water in which lentils and rice were soaked. Add lentils and rice to the pressure cooker. Sauté for 1-2 minutes.

Step 11: Add water and mix.

Step 12:  Put on the lid of the pressure cooker. Cook on a medium flame till 3 whistles.

Step 13: Allow the pressure to get released naturally and then open the lid of the pressure cooker.

Step 14: Add a dollop of ghee and chopped cilantro. Mix. Your delicious moong dal khichdi is ready to be enjoyed!
