This Greek lima bean casserole is a hearty, comforting dish made with tender beans simmered in a rich tomato sauce with olive oil, feta cheese, garlic, and herbs. Perfect with crusty bread or a sprinkle of feta on top.

Step 1: Collect the recipe ingredients.

Step 2: Wash dried lima beans and soak in water for around 8 hours.

Step 3: Put the soaked beans in a large pot with water and bay leaves. Cook for around 45 minutes to an hour or until cooked.

Step 4: Strain the cooked beans and but in a bowl.

Step 5: Sauté chopped onion, carrot, and minced garlic in some olive oil until the onion turns translucent.

Step 6: Add chili flakes, oregano, thyme, black pepper, and crumbled veg bouillon cube. Saute for a few seconds.

Step 7: Add crushed tomatoes, tomato paste, salt, and water.

Step 8: Cook for 4-5 minutes.

Step 9: Add cooked beans and cook for another 2-3 minutes.

Step 10: Add chopped parsley and dill.

Step 11: Transfer the beans and sauce to a baking dish.

Step 12: Cut the feta cheese block into small pieces and place them in different places in the dish. Slightly cover with the sauce.

Step 13: Bake in a pre-heated oven at 200℃ (around 400℉) for around 30 minutes. Your delicious lima bean casserole is ready!
