Moroccan couscous with chickpeas

Collect the recipe ingredients.

Step 1: Put couscous in a large bowl. Add boiling vegetable stock, mix and cover the bowl. Don't remove the lid for at least 5 minutes and then fluff with a fork.

Step 2: Heat oil in a skillet. Add chopped onion. Cook until the onion turns translucent.

Step 5: Add ground cumin, cinnamon, dried red chili, and dried ginger. Sauté for a few seconds.

Step 7: Add cooked chickpeas and salt. Cook for 1-2 minutes.

Step 8: Add couscous and black raisins. Mix everything.

Step 9: Cover the pan and cook for another 2-3 minutes.

Step 10: Finally, add pomegranate arils, lemon juice, chopped cilantro, and mint leaves. Mix.
