Step 1: Prepare salad dressing by mixing olive oil, balsamic vinegar, maple syrup, lemon juice, Dijon mustard, minced garlic, chili flakes, black pepper, and salt.

Step 2: Cook green lentils.

Step 3: Rinse quinoa and put in a cooking pot along with water or vegetable stock.

Step 4: Cook uncovered for 15-20 minutes or until all the water gets evaporated.

Step 5:Turn off the heat and cover the pot for around 5 minutes.

Step 6: After 5 minutes, remove the lid and fluff quinoa with a fork.
