Quinoa soup with lentils- a simple yet flavorful vegan Moroccan soup full of flavors and textures.

Step 1: Collect the recipe ingredients.

Step 2: Heat oil in a cooking pot. Add chopped onion and saute until it becomes trnaslucent.

Step 3: Add chopped carrots and celery. Sauté for 2-3 minutes.

Step 4: Add minced garlic and sauté for a minute.

Step 5: Add bay leaves, chili flakes, coriander powder, turmeric powder, cumin powder, cinnamon powder, and crushed black peppercorns. Saute for around 30 seconds.

Step 6: Add chopped tomatoes and salt.

Step 7: Cook for 3-4 minutes or until the tomatoes turn mushy.

Step 8: Add rinsed red lentils and quinoa. Sauté for a minute.

Step 9: Add vegetable stock and cook covered for around 25 minutes or until the lentils are cooked.

Step 10: Add baby spinach and cook for around 2 minutes or until the leaves get wilted.

Step 11: Remove bay leaves.

Step 12: Add lemon juice and chopped cilantro. Mix. Your lemony lentil quinoa soup is ready to be enjoyed!
