Fattoush

This delicious vegan Arabic salad Fattoush is made by mixing fresh greens and vegetables with fried or toasted pieces of Lebanese bread known as Khubz.

Ingredients

  • 1 lebanese bread medium sized
  • ½ medium sized lettuce head roughly chopped
  • ½ cup scallion finely chopped
  • 1 cup parsley leaves finely chopped
  • ½ cup mint leaves finely chopped
  • 1 tomato diced
  • 1 persian cucumber/ any cucumber you have diced
  • 1 small red onion chopped
  • 1 tbsp olive oil
  • Salt as per taste

Ingredients for dressing

  • 3 teaspoons ground sumac
  • 1 tablespoon lemon juice
  • 3 cloves garlic grated
  • 1 teaspoon dried mint leaves
  • 1.5 tbsp olive oil
  • Salt as per taste

Instructions

  • Cut bite-size pieces of the Lebanese bread, drizzle some olive oil, salt and bake in a pre-heated oven at 180 degrees Celcius for 7-8 minutes or till they become crunchy.
  • Add all the chopped vegetables, herbs in a bowl and keep aside.
  • Mix all the ingredients under dressing in a separate bowl and pour it over the salad. Mix well and then add in the toasted bread. Mix again and serve.

Notes

Don't make this salad in advance and if you have to then don't add the toasted bread until you are ready to serve the salad otherwise the bread will become soggy.
