This pea and peanut salad is a creamy and crunchy vegetarian salad perfect for a hot summer day. Ten minutes and a handful of basic ingredients are all it takes to make this simple pea salad recipe.

Ingredients

  • 2 cups cooked green peas
  • 1 cup roasted peanuts without skin
  • 1 small red onion finely chopped
  • 2 teaspoons lemon juice adjust to taste
  • 2 stalks spring onion finely chopped
  • ¼ cup sour cream
  • 2 tablespoons cream cheese
  • ½ tablespoon milk or as required to adjust the consistency of the dressing
  • 1 tablespoon honey
  • 1 teaspoon Dijon mustard
  • Ground black pepper to taste
  • Salt to taste

Instructions

  • Make salad dressing by mixing sour cream, cream cheese, milk, honey, lemon juice, salt, and pepper, in a bowl. Keep it aside.
  • In a large bowl, put cooked peas, roasted peanuts, chopped red onion, and spring onion.
  • Add salad dressing and toss until everything gets mixed well.

Notes

  • After thawing the frozen peas, drain the liquid otherwise the salad will become runny.
  • You may put the cooked peas in ice water for a few minutes. This will make them more crisp and also give them a brighter green color.
  • Instead of sour cream, you can also use Greek yogurt or mayonnaise in the salad dressing.
  • Ingredients like cooked sweet corn kernels or chopped sweet bell peppers can also be added to this crunchy pea salad.
  • To add a slight kick to the dish, add red pepper flakes.
  • Add fresh mint leaves to make this summer salad even more refreshing.
  • Instead of using plain roasted peanuts, you can also use a flavor of peanuts you enjoy like black pepper peanuts, masala peanuts, etc.
  • Cheese lovers may also add shredded cheddar cheese to this crunchy peas salad.
