No bake energy bites with apricot and nuts

1 cup dried apricots 1/2 cup walnut kernels 1/4 cup almonds 3 dates pitted 3 tbsp desiccated coconut 1/2 teaspoon vanilla extract 1/4 teaspoon sea salt
Put all the ingredients in a food processor and pulse until the mixture starts coming together. Take equal size portions of the mixture and roll between your palms to make small balls. You can enjoy them immediately or keep in the fridge for 30 minutes before serving.
Adjust the number of dates depending upon sweetness preference.
You can add more seeds and nuts to it.
Store them in an airtight container. They will be fine in the fridge for around 2 weeks and 3 months in the freezer.
