Step 1: Collect the recipe ingredients.

Step 2: Heat oil in a pan. Add cumin seeds and let them splutter. Add chopped garlic and sauté for a minute.

Step 3: Add thinly sliced onion and cook until it turns golden brown. Add chopped tomatoes, green chilies, and salt. Cook until the tomatoes turn mushy.

Step 4: Add chopped potatoes, cover the pan and cook until the potatoes are half cooked.

Step 5: Spread a layer of chopped eggplants on top of potatoes. Don't mix. Cover and cook until the eggplant is almost cooked (around 15 minutes).

Step 6: Remove the lid and mix everything.

Step 7: Push the vegetables towards the edges of the pot and add powdered spices in the center. Sauté for a few seconds then mix everything.

Step 8: Add sliced ginger and chopped cilantro. Mix.

Step 9: Cover the pot and cook for 5-7 minutes.

Step 10: Remove the lid and stir for another 1-2 minutes. Garnish with chopped cilantro.
