Step 1: Collect the recipe ingredients.

Step 2: Saute chopped garlic and onion in some olive oil until the onion turns translucent.

Step 3: Add roma tomato halves, salt, ground black pepper, red chili flakes, and dried oregano.

Step 4: Cook on medium heat until the tomatoes start turning mushy.

Step 5: Mash the tomatoes with a masher.

Step 6: Add tomato paste and cook for around 30 seconds.

Step 7: Add orzo and saute for a minute.

Step 8: Add vegetable stock and mix everything.

Step 9: Cook uncovered for around 12 to 15 minutes on medium heat i.e. until the orzo is cooked. Garnish with chopped parsley. Your Kritharaki is ready to be served!
