Step 1: Collect the recipe ingredients.

Step 2: Slice the mushrooms. Toss with some soy sauce and ground black pepper.

Step 3: In a bowl, mix dark soy sauce, soy sauce, oyster mushroom sauce, vinegar, chili oil, and sugar

Step 4: Cook flat rice noodles following package instructions. Strain.

Step 5: While the noodles are getting cooked saute sliced onion in vegetable oil for around 2 minutes.

Step 6: Add chopped ginger, garlic, and saute for 2 minutes.

Step 7: Add marinated mushrooms and saute for 3-4 minutes.

Step 8: Add roughly chopped bok choy and green onions. Cook for 1-2 minutes.

Step 9: Add sauce blend and cook on high heat for 1-2 minutes.

Step 10: Add bean sprouts and cooked noodles.
