Step1: Collect the recipe ingredients.

Step 2: Wash and soak dried chickpeas in water for at least 7 hours.

Step 3: Heat olive oil in a cooking pot.

Step 4: Add chopped onion, celery, carrot, and minced garlic. Saute until the onion turns translucent.

Step 5: Add bay leaf and dried oregano. Sauté for a few seconds.

Step 11: Transfer a ladle full of chickpeas to a grinding jar. Add olive oil, lemon juice, salt, and ground black pepper. Make a smooth paste.
