Roasted red pepper and tomato soup- a simple comfort food soup that's full of flavors. It's also suitable to be consumed by vegans and people on gluten-free diet.

Step 1: Collect the recipe ingredients.

Step 2: Deseed bell peppers and roughly chop along with tomatoes and onion. Peel the garlic cloves. Spread them on a baking tray. Drizzle olive oil and sprinkle salt and pepper. Toss.

Step 3: Bake in a preheated oven for around 40 minutes at 200°C(400°F) or until the vegetables are roasted and slightly charred.

Step 4: Allow the roasted vegetables to reach room temperature and then put in a blending jar. Add dried herbs.

Step 5: Blend the roasted vegetables until smooth and then transfer to a cooking pot.
