Spicy tomato rice

Step 1: Collect the recipe ingredients.

Step 2: Heat oil in a pan. Add bay leaf, black mustard seeds, cloves, and black pepper corns. Sauté until the spices become fragrant.

Step 3: Add sliced onion and cook until the onion starts turning brown.

Step 4: Add curry leaves and ginger garlic paste. Saute for a minute.

Step 5: Add coriander powder, red chili powder, and garam masala. Sauté for a few seconds.

Step 6: Add chopped tomatoes, green chili peppers, salt, and ground black pepper.

Step 7: Cook until the tomatoes turn mushy and are nicely cooked.

Step 8: Add rice and cook with tomatoes for 1-2 minutes. Add roughly chopped cilantro.

Step 9: Add water and mix.

Step 10: Cook covered on medium flame for around 15 minutes. Once the rice is cooked, switch off the stove and don't remove the lid for at least 5 minutes.
