Step 1: Collect the recipe ingredients.

Step 2: Put pressed tofu cubes in a bowl. Add soy sauce and black pepper. Toss.

Step 3: Spread on a baking tray and bake at 200°C (around 400°F) for 12-14 minutes.

Step 4: Saute minced ginger, garlic, chopped spring onion white and bok choy stalk in some cooking oil.

Step 5: Add vegetable stock, soy sauce, and hot sauce. Let the stock simmer.

Step 6: Add noodles, bok choy greens, and black pepper.

Step 7: Cook until the noodles are cooked.

Step 8: Add baked tofu cubes and vinegar. Cook for a minute. Garnish with spring onion greens
