This winter salad with lentils and oranges is a delicious and nutritious protein-rich salad perfect for the colder days of the year. It's vegan and gluten-free.

Step 1: Collect the recipe ingredients.

Step 2: Put chopped carrot, pumpkin, sliced onion, and whole garlic cloves in a bowl.

Step 3: Add olive oil, salt, and ground black pepper.

Step 4: Toss.

Step 5: Spread the vegetables on a baking tray lined with aluminum foil.

Step 6:  Bake in a pre-heated oven for 20-25 minutes at 200°C (around 400°F).  Squeeze out the pulp of roasted garlic and keep it aside.

Step 7: Put cooked lentils in a large bowl. Add roasted vegetables.

Step 8: Add peeled and chopped oranges, pomegranate arils, and pepitas.

Step 9: Add chopped parsley or cilantro.

Step 10: In a bowl, mix pomegranate molasses, garlic pulp, olive oil, orange juice, lemon juice, chili flakes, salt, and ground black pepper.

Step 11: Pour salad dressing over the salad.

Step 12: Gently toss. Your delicious lentil salad is ready to be served.
