Vegan beetroot hummus and avocado sandwich is a great protein-rich recipe which is perfect to be eaten as a healthy breakfast, lunch or snack.

Ingredients

  • 8 slices brown bread/ any bread of your choice
  • 6 tbsp beetroot hummus or any hummus of your choice
  • 1 ripe avocado
  • 2-3 cloves garlic
  • 1 tbsp red chili flakes
  • ¼ teaspoon black pepper powder
  • 1.5 tbsp lemon juice adjust as per taste
  • Salt as per taste

Instructions

  • Slightly toast the bread slices and keep aside.
  • Remove the seed of the avocado, take out the pulp and mash it. Add grated garlic, chili flakes, lemon juice, salt & pepper.
  • Take a toasted slice of bread. Apply around 1.5 tablespoons of beetroot hummus on it followed by mashed avocado. Cover with another slice of bread to make a sandwich. Cut into the desired shape and enjoy
