A few days ago, I shared the recipe for beetroot hummus on my blog. Whenever I make that beetroot hummus, I save some portion to make a beetroot hummus sandwich for the next day’s breakfast or lunch.

Here I have used beetroot hummus as it’s not only healthier but also gives a beautiful pink color which looks very pleasing with the green color of avocado. However, if you don’t like beetroot or have plain hummus or any other type of hummus, you can use that too.

Beetroot hummus and avocado sandwich
Ingredients
- 8 slices brown bread/ any bread of your choice
- 6 tbsp beetroot hummus or any hummus of your choice
- 1 ripe avocado
- 2-3 cloves garlic
- 1 tbsp red chili flakes
- ¼ teaspoon black pepper powder
- 1.5 tbsp lemon juice adjust as per taste
- Salt as per taste
Instructions
- Slightly toast the bread slices and keep aside.
- Remove the seed of the avocado, take out the pulp and mash it. Add grated garlic, chili flakes, lemon juice, salt & pepper.
- Take a toasted slice of bread. Apply around 1.5 tablespoons of beetroot hummus on it followed by mashed avocado. Cover with another slice of bread to make a sandwich. Cut into the desired shape and enjoy
