  • 5 slices bread
  • 1 ripe avocado
  • 1 cup pineapple chunks
  • 1 cup sweet corn kernels
  • 1 chili pepper finely chopped
  • 1 garlic clove grated
  • 1.5 tbsp lime juice
  • 1/2 teaspoon ground black pepper
  • Salt as per taste


  • Peel and mash the avocado in a bowl. Add salt, pepper, garlic, chili, and lime juice.
  • In a pan add pineapple cubes and saute till they start caramelizing. Take out on a plate and either mash or finely chop them.
  • In the same pan add corn kernel, sprinkle a pinch of salt and allow to cook for 3-4 minutes.
  • Add pineapple and corn to avocado and mix well. Check and adjust the seasoning.
  • Toast the bread slices as per your liking and spread the avocado mix. Enjoy with your favorite breakfast drink.
