Vegetarian baked gnocchi with feta and cherry tomatoes
This baked gnocchi with feta and tomatoes is a comforting, one-pot vegetarian recipe that can be prepared in just 25 minutes. It has a delicious combination of soft and chewy gnocchi, crunchy onions and bell peppers, juicy cherry tomatoes, creamy feta, roasted garlic, aromatic herbs, and flavorful seasonings, which makes this gnocchi bake irresistible. It's a perfect easy weeknight dinner recipe that everyone loves.
Put cherry tomato halves, gnocchi, feta cheese cubes, chopped onion, bell pepper, garlic slices, pasta sauce, olive oil, and all the seasonings in a casserole dish.
Gently toss everything. Make sure that all the ingredients are nicely coated with the sauce so that they don't get burned in the oven.
Bake at 200°C (or 400°F) for around 20 minutes.
Garnish with finely chopped parsley.

Potato gnocchi is the best for this recipe but you can choose any other gnocchi of your choice too.
You can add more vegetables like broccoli, peas, sweet potatoes, mushrooms, sun-dried tomatoes, etc, to make this easy meal more nutritious.
I have cut the feta block into small cubes and spread them in the casserole. You can also crumble feta and use it instead of using cubes.
Make sure to add sauce that's enough to nicely coat all the ingredients otherwise the ingredients may get burned on getting baked.
Different ovens perform differently so keep an eye on your dish after 15 minutes in the oven.
Feta cheese and pasta sauce also have salt in them so add extra salt carefully and only if needed. I have added only a pinch of salt to this dish.
You can skip feta if you want or use any other cheese of your choice.
To add some sweetness to this baked gnocchi you can a little honey or maple syrup too.
