For this vegetarian gnocchi casserole recipe, you will need the ingredients that are shown below:

Ingredient notes and substitute suggestions

  • Gnocchi: It's a type of Italian dumpling made with potatoes and flour. They look like shortcut pasta. Traditionally egg is also added to it but generally, store-bought gnocchi is egg-free. I have used store-bought potato gnocchi. You can use any type of gnocchi that you like.
  • Cherry tomatoes: Mini roma or grape tomatoes can also be used.
  • Bell pepper: I have used red bell pepper but any variety can be used in this recipe. You can also add more vegetables of your choice like zucchini, broccoli, cauliflower, green beans, peas, etc.
  • Feta cheese: It's a fresh, creamy Greek cheese usually made with sheep or goat's milk, and sometimes cow's milk too. It's a very savory cheese so when you are using it in a dish, use salt moderately.
  • Pasta sauce: Feel free to use any tomato-based pasta sauce of your choice. You can use passata too.
  • Onion: White, brown, or red onion, all are fine to be used in this gnocchi feta bake.
  • Seasonings: I have flavored this oven-baked gnocchi with fresh garlic, dried oregano, dried basil, red pepper flakes, salt, and ground black pepper. You can use seasonings of your choice. Some other seasonings that taste good in this dish are onion powder, garlic powder, dill, rosemary, thyme, mixed Italian seasoning, etc.
  • Olive oil: Use good quality extra virgin olive oil for best results. If you don't have olive oil, use canola oil or any neutral-flavored oil of choice.

To make this oven-baked feta gnocchi recipe, just follow the simple step-by-step instructions that are given below:

Step 1: Put cherry tomato halves, gnocchi, feta cheese cubes, chopped onion, bell pepper, sliced garlic, and all the seasonings in a casserole dish

Step 2: Pour pasta sauce on top. Add 1-2 tablespoons of olive oil.

Step 3: Gently toss everything. Make sure that all the ingredients are nicely coated with the sauce so that they don't get burned in the oven.

Step 4: Bake in a preheated oven at 200°C (or 400°F) for around 20 minutes. Garnish with fresh herbs of choice like parsley, spring onions, or basil leaves.

Store the leftover dish in an airtight container and refrigerate for 3-4 days.

To reheat, either microwave or transfer to an oven-safe dish, cover with aluminum foil, and bake in a preheated oven at 180°C (350°F) for around 15 minutes or until heated well.

  • Potato gnocchi is the best for this recipe but you can choose any other gnocchi of your choice.
  • You can add more vegetables like broccoli, peas, sweet potatoes, mushrooms, sundried tomatoes, etc, to make this easy meal more nutritious.
  • I have cut the block of feta cheese into small cubes and spread them in the casserole. You can also crumble feta and use it instead of using cubes.
  • Feta cheese and pasta sauce also have salt in them so add extra salt carefully and only if needed. I have added only a pinch of salt to this dish.
  • Make sure to add sauce that's enough to nicely coat all the ingredients otherwise the ingredients may get burned on getting baked.
  • Different ovens perform differently so keep an eye on your dish after 15 minutes in the oven.
  • You can skip feta if you want or use any other cheese of your choice.
  • To add some sweetness to this gnocchi casserole you can add a little honey or maple syrup too.

  • 380 grams uncooked potato gnocchi 2.5 cups
  • 100 grams feta cheese cubes 1 cup
  • 240 grams any pasta sauce of choice or passata 1 cup
  • 1 small red bell pepper finely chopped
  • 1 small white onion finely chopped
  • 2-3 large garlic cloves thinly sliced
  • 220 grams cherry tomatoes, cut into half 1.5 cups
  • Fresh chopped parsley for garnishing
  • ¼ teaspoon red chili flakes
  • ½ teaspoon dried basil
  • ½ teaspoon dried oregano
  • ¼ teaspoon ground black pepper
  • Salt to taste
  • 1 tablespoon extra virgin olive oil

Instructions

  • Preheat the oven to 200°C (or 400°F).
