Quick and easy Asian style mushroom noodles that get ready in less than 30 minutes and taste delicious.

Step 1: Collect the recipe ingredients.

Step 2: Cook noodles as per the instructions given on the packet.

Step 3: Strain the noodles. Don't discard the water, keep it aside.

Step 4: Pour cooking oil on noodles and gently toss.

Step 5: In a bowl, mix soy sauce, vegan oyster sauce, red chili sauce, vinegar, sesame oil, salt, and ground black pepper.

Step 6: Heat oil in a wok. Add chopped white part of spring onion, grated ginger, and minced garlic. Sauté for about a minute.

Step 7: Add chopped mushrooms and saute for 4-5 minutes or until the mushrooms are cooked.

Step 8: Add the sauce mix and cook for around 2 minutes.

Step 9: Add spring onion greens and sauté for a few seconds.

Step 10: Add cooked noodles and around ¼ cup of water in which noodles were cooked.

Step 11: Stir fry on high flame for 2-3 minutes or until everything gets mixed and the onion greens get wilted.
